TBA WIN 10/08/11 vs. Georgia * Knoxville, Tenn. TBA WIN10/15/11 vs. LSU * Knoxville, Tenn. TBA WIN MAJOR revenge game = a W 10/22/11 at Alabama * Tuscaloosa, Ala. TBA LOSS although a close game I think... I can still hope for an upset. 10/29/11 vs. South Carolina * Knoxville, Tenn. TBA LOSS unless Garcia continues being a head case, SC is loaded this year. 11/05/11 vs. MTSU Knoxville, Tenn. TBA WIN11/12/11 at Arkansas * Fayetteville, Ark. TBA LOSS no hard feelins? 11/19/11 vs. Vanderbilt * Knoxville, Tenn. TBA WIN 34-zippo as usual. 11/26/11 at Kentucky * Lexington, Ky. TBA WIN they got hoops on their mind anyway So there's how I see it, 8-4 Vols, 4-4 in conference, and a shot at Independence, Chick Fil A, Music City, prolly not Citrus or Cotton... but much improvement for Dooley and co. well we see that you have retained you sophisticated picking skills as usual.......NOT!!!! I think we get USC this year since we had them on the ropes in the fourth quarter last year and they were basically had to outscore the vols. Overall I think we get LSU and UF I think we can beat them with their new staff. So 9-3 or 10-2 if we are lucky

While I always say that wine is for drinking and not investing, I don't know if I would drink that one. First of all, the value of an old wine like that is in the history and as a museum type piece. After you open it, the value might be a whole lot less. Secondly, I'm not sure that the quality of a 200 year old wine is going to be very good. I'd keep it in the display case.

I just think it's bad timing.
Austin Ward from the KNS says that Austin Johnson tried to fight someone (not sure if he was the aggressor) and was punching parked cars in the parking lot. If he was drunk and doing that he was going to get arrested no matter whether he had an open container or not.
Sorry, this is just my personal hangup and I find it impossible to let it go when people throw those rocks through those glass walls.
How about we just end this with me agreeing that Urban Meyer was really stupid to say what he said.
No big deal man we all have those things going on.....and yeah I agree with ya that if Johnson was that agressive he would have been arrested. I know several police officers and one called me earlier saying that Johnson was basically D&D and did not resist or anything like that.

Not a good time to be pointing fingers. That glass houses thing is definitely in play. All I was pointing out was that UF had ANOTHER player arrested that was from the Urbanator era at UF when he claimed he was going to recruit the top 1% of 1% in ability and character and how that this was like the 28th arrest of the exemplary recruits of Urban...not a slam on UF or any other thing like that. Yes Austin Johnson got arrested for bieng drunk in Knoxville, but I do know that he was arrested more for violating the "open container" law and would not have been arrested it if had not been for the "open container".

Their RB situation is very precarious, and they have had two straight classes without good OL, not to mention injuries to OL as well. At RB they lost both their major RBs to suspension/dismissal, so they're down to a true FR basically in Crowell. I don't think it will be a very good season for the dawgs
Clank Clank Clank.....this is just like all those years everybody bitched about Fulmer not inserting great Freahman RB ____________ (insert name here) that could not block or pick up the playbook in all reality and we lost ot UF or UGA or somebody. UGA is now feeling the pain that they so wildly revelled in when Fulmer was here. Football is cyclic and what goes down will come up......

General Boards / Recipe Board / Dinner Party Quality Shrimp Bisque
|
on: July 18, 2011, 06:13:26 EDT
|
This is a recipe I am now making for Shrimp Bisque. It is a very flavorful spicy but great soup that will wow the quests at your next dinner party, but plan on some time to fix it cause it does take about 2 to 3 hours to complete.
Shrimp Bisque consists of two main components the Shrimp Fumet and then the Soup and cream component.
1 1/2 lbs shell and tail on shrimp 2 Lobster Tails 8 Ounces Mirepoix (4 ounces onions, 2 ounces celery, 2 ounces carrots - medium dice) 3 ounces tomato paste 2 ounces oil 64-74 ounces of water 1 sachet epie (Parsley, thyme, bay leave, garlic lobe) salt and Pepper ( 1 teaspoon)
Put the 2 ounces of oil into a stock pot and heat to medium then add the shells from the shrimp and the lobster (after you have removed all the meat) and the mirepoix. Let these saute until the celery and onions in the mirepoix have reached a translucent characteristic. (About 7 - 11 minutes) Then add in the tomato paste and saute with the shells and mirepoix till the tomato paste begins emitting a sweetish tomato smell (about 1 - 2 minutes). Add the 74 ounces of water and bring this to a boil and add the salt and pepper and sachet epie. Reduce the heat and let simmer for 45 minutes (skimming off any fat while the simmer is occuring).
Remove from the heat and remove the solids by straining through a metal fine mesh sieve lined with cheesecloth. Discard the solids (the shells and mirepoix) and place the stock into the refrigerator for chilling.
Create the fumet.
8 Ounces of white mirepoix (4 ounces onions 2 ounces parsnips 2 ounces celery root) 6 ounces blond roux 3 ounces tomato paste 2 ounces oil Shrimp stock 1 sachet epie
Heat the white mirepoix in the stock pot in the 2 ounces of oil. Let the onions get translucent then add in the blond roux and the tomato paste and let this saute until the tomato paste begins to smell sweetish. Add in the stock and stir as the stock is gradually added to the pan making sure to eliminate any lumps (this is critical to this dish). Add in the sachet and get the fumet to a roiling boil and then let simmer for 45 minutes ot 1 hour to eliminate any of the flour taste within the fumet. POur through a strainer to remove the mirepoix and any other solids from the final fumet. To get really silky here strain a second time through doubled cheesecloth.
Shrimp Bisque
1 medium onion small dice Tomato Paste 2 ounces oil Fumet (from above) Shrimp from the shells Lobster meat form the shells 2 ounces brandy 4 ounces sherry 1/4 teaspoon old bay seasoning 1 teaspoon worcestshire 1 teaspoon hot sauce (or more according to taste) 10 ounces of cream
Add the oil and onions ot the stock pot and let saute until translucent. Add int he tomato paste and let saute for 1 to 2 minutes. Then add in the fumet and let simmer on the stove for twenty minutes. Remove from the heat and pour through a strainer to remove the solids form the soup and return to the heat. In the meantime place the cream in a pot and let it begin to heat until it boils. Add the cream to the fumet mixture returned to the stove on simmer and combine with a whisk. The color will go from deep rust color to a lighter rust color. Add in the shrimp and lobster that you have sauted in another skillet with a little bit of oil and then deglaced the pan with the brandy. Pour the shrimp and brandy mixture into the pot with the fumet and cream. Add the lobster that was done the same as the shrimp and then add in the seasoning (old bay, worcestshire, and hot sauce) and stir for a minute or two. Add in the sherry (2 ounces) to give the soup a sparkling finish and serve right from the stove. This will make tyour next dinner party a memorable event for your guests.

General Boards / Recipe Board / Re: Pimento Cheese Spread
|

Wife was making this recipe for a bridal shower, and I love it so much I thought I would share: -Block of Velveeta cheese (if you like it spicy, I believe Velveeta has a jalepeno offering which I've never tried but sounds like it'd be good) -2 large jars of diced pimento (at our grocery, there are two jar sizes available.. the large is about 4oz) -1/2 cup of mayonnaise -5oz can of evaporated milk -2tsp Vegetable Oil -4-5 tsp sugar (depending on your liking) Melt cheese, stir in pimento, then add the rest. Best if refrigerated overnight. OK I have to weigh in on the great pimento cheese debate since I am sort of a chef at times. I make a pimento cheese that is for use on sandwiches or in burgers in the middle of the burger. THis is my recipe after several trials and tribulations. 2 Boxes Kraft Velvetta Cheese 6 Jars of Pimentos 4 Cups of Sharp Cheddar Finely Shredded (not the coarse shred) 1/2 to 3/4 cup Miracle Whip Pepper and Salt to taste Cut the Velvetta into chunks and pulse in your food processor with about 1/2 jar of pimentos for each load of velvetta. You should end up with about half a jar of the pimentos remaining to be used just like they are from the jar. Before putting the pimentos in drain off some of the oil/water that the pimentos are packed in but do not dry them. After the velvetta is a small dice place into a large bowl. Do this with the rest of the velvetta and pimentos. Add the remaining drained pimentos and the cheddar into the bowl and add the miracle whip, salt, and pepper and mix with a large fork. This is a very easy pimento cheese and the one i like to fix during the summer since it is quick and easy.

It's hard to believe we're about to go inside of 50 days...but it can't get here soon enough. Every football fan in the country with an audio editor had to make their own version last fall...and I was no exception. http://bengarrett.net/Boys%20of%20fall.mp3I mashed up a version with John Ward audio clips that i played at the tailgates last year....with a 50 watt per channel sound system you can pump some volume...but I want to go to 100 watts or more per channel.

The police hasn't released any names yet but.....My first cousin's son was found dead yesterday after he went missing either friday night or saturday morning. The story I heard was he went to collect some money a guy owed him. Could be as many as 4 involved. Was found 2 miles off the road in the woods and has been sent for an autopsy. He is survived by a twin brother, and a step sister, mother and father. He was preceded in death by an older brother.
Its just another sad story in the life of this family. I feel so sorry for the mother. My cousin has never been anything but a drinker, drugger, barroom brawler and philanderer which he has paid for now by being paralyzed by a stroke. This will be the 2nd of the 3 children they had together who they will bury.
For all of us we do NOT know when our personal man with the scythe will reap our rewards. I feel for you and your extended family. It is hard to lose anyone in the family especially a son or a daughter.

Thanks, Emeril. Regarding taxes, it cannot be worse than in Michigan, especially where we live. I have a 2800 sq. ft. home on .78 acres, and pay >$5500 a year. Friggin ripoff compared to the services we get out of that (i.e. still have to pay for garbage collection).
Anyway, thanks for the tax information. We will keep in mind if we get to that point.
Yeah that suxes for the tax amount ... it is nowhere near that kind of rip off in Beautiful East TN that I see from your post .... but of all the counties with access to Knoxville, Loudon or Roane are probably the best west of Knoxville and the thing I like about where i live is that I am 15 minutes from Turkey Crek and 30 minutes or less from Pellissippi Parkway where I work so it is not a bad place to live and then have to go to work..... (Damn when am I ever going to win Powerball...... ) You can also look in the Anderson County area towards Clinton and Oak Ridge. There are some opportunities in Oak Ridge and Clinton to acquire some beautiful land and not be taxed to death. Both are good places to raise your kids with Clinton being that very idealized East TN burg with the courthouse square and the high school just behind it where the integration issue of the schools hit East TN full force in the face. I prefer the area west of downtown Knoxville but that is just me. 101 will tell ya North in P'al and others will say Maryville, but i think Loudon County and Lenoir City area is some of the finest in the East TN area and there are some major deals in the my subdivision also. In fact recently the house next to me which was a bank foreclosure was sold way below the book value.

....I need some input. What are the better school systems around the Cedar Bluff area? And how do school assignments occur there? Is there a School of Choice system available, or does your child have to go to the school that is associated with where you live? I am talking about the area around Cedar Bluff, Farragut, Concord.....maybe even up to Ball Camp? I am not familiar with these areas at all, but see them on MapQuest around Cedar Bluff.
Thanks for any help you can provide here.
Let me add a couple of things to your mix....first of all if you go just a wee bit farther out than Farragut you can avoid the HIGH HIGH Knox county taxes and get more bang for your housing dollar. By going right over the Loudon County line you can end up with a tax rate that is 1/2 of the tax rate in West Knox County and Farragut area. Living in the Cedar Bluff area means you will be paying City and County taxes there in many places. Sooooooo come out to just over the Loudon County line and get some breaks on your taxes. For example when we lived in Knox County (out near Pellissippi Parkway) we were paying almost exactly what we are payng in taxes now for a house 1/2 the size of the one we are now in. As far as schools you can also check out CAK and Webb School which are very good private schools also if you are of that bent.
