There cannot be a better trio of wr's and qb combo in the country than we have.

Amen ... and how L-O-N-G it has been since we could say that!  This UT offense is enjoyable to watch.   Just wish we had a "dad-gummed"  running game ... but these big young O-linemen will give that to us next season (or two).

OK I have to weigh in on the great pimento cheese debate since I am sort of a chef at times.

I make a pimento cheese that is for use on sandwiches or in burgers in the middle of the burger.  THis is my recipe after several trials and tribulations. 

2 Boxes Kraft Velvetta Cheese
6 Jars of Pimentos
4 Cups of Sharp Cheddar Finely Shredded (not the coarse shred)
1/2 to 3/4 cup Miracle Whip
Pepper and Salt to taste

Cut the Velvetta into chunks and pulse in your food processor with about 1/2 jar of pimentos for each load of velvetta.  You should end up with about half a jar of the pimentos remaining to be used just like they are from the jar.  Before putting the pimentos in drain off some of the oil/water that the pimentos are packed in but do not dry them.  After the velvetta is a small dice place into a large bowl.  Do this with the rest of the velvetta and pimentos.  Add the remaining drained pimentos and the cheddar into the bowl and add the miracle whip, salt, and pepper and mix with a large fork.  This is a very easy pimento cheese and the one i like to fix during the summer since it is quick and easy.

Emeril, I assume you have compared / contrasted Miracle Whip with a good Mayo ... is there a reason for the M.W.?  Just for the lighter fat content?  Better taste?  Blends better?    Just curious.

On the main board we were talking about Cincy-style chili ... here's something very (very) vaguely like it.

Fresh Veggie Chili
===========

Cut 1 large poblano chili,
1 large bananna pepper chili,
and 1 large yellow (or red) onion
into medium size pieces.
Put these into a chopper (or blender)
and chop until fine, but not liquid.

Put this into a 2-qt. saucepan that
has some olive oil in it,
add salt to taste (sea salt / RealSalt is best)
and saute for 10 or 15 minutes on medium.

Add one large can (32oz size) Contadina
crushed tomatoes, stir well.

Add 4 Tbsp. oregano, 2 Tbsp. comino power (cumin),
and some sweet basil.  Stir well.

Add 2 Tbsp. McCormick's Mexican Chili powder
(which has cocoa and chili powder mixed.)
Or, you can just use 1 Tbsp. regular chili powder
and 1 Tbsp. cocoa powder.  Stir well.

Drain one can dark kidney beans and rinse them
in a colander.  Add to the saucepan.
Stir gently, cook on low for 30 to 40 minutes.

The flavor will be twice as good the next day,
after storing in a refrigerator overnight.

Serve with steamed rice, or even over pasta.
Add cheese and chopped onions if served over pasta! (Cincinnati Chili style).

Historically when UT can't run the ball ... they don't win.

BUT ... if UT *can* move the ball on the ground this game ... it could be a laugher, maybe a 3TD UT win.  It all hinges on the running game.
