Its Tailgating Time in Tennessee (AGAIN)!!!

This recipe is what I served at the Music City Bowl Tailgate and the recipe was requested by several people so here is the recipe.



The Marinade

1 medium onion, cut into chunks
2 garlic cloves
2 tablespoons sugar
1 tablespoon ground mustard
1/2 teaspoon ground ginger or 1 piece of crystallized ginger
1 1/2 teaspoons pepper
1/2 teaspoon cayenne pepper
1/2 cup soy sauce or terryaki sauce
1/4 cup water
1/4 cup white wine
2 pounds beef sirloin tip roast, cut into 1/4 inch thick slices

(You can substitue Lamb for the beef also)

Place the chopped onions, garlic, sugar, mustard, ginger, pepper, and cayenne into the food processor or blender and pulse until the onion and garlic is almost at a very fine consistency.  Add the soy or terryaki and the water and pulse for another 10-20 seconds.  Cut the sirloin or lamb into 1/4 wide strips and place into the marinade and refrigerate overnight (12 hours)


Tzatziki Sauce

1 medium cucumber, peeled, seeded and cut into chunks
4 garlic cloves
1/2 teaspoon salt
1/4 cup cider vinegar plus 3 tablespoons white wine vinegar
1/3 cup olive or vegetable oil
1 cup sour cream
1 cup plain greek yogurt
2 tablspoons of fresh dill

To make the sauce put the cucumber and garlic and salt into a food processor or blender and pulse until the cucumber is chopped fine.  Add the vinegar and olive oil and pulse for twenty seconds.  Place the sour cream and yogurt into a bowl and add the cucumber mixture from the processor or blender and combine.  Chop the fresh dill fronds until a fine chop is achieved and add to the sauce and stir until everything is combined.  Place into a bowl and cover and chill in the refrigerator until needed.



Take the marinated meat and cook on high heat in 2 tablespoons of olive oil in a wok or similar type of skillet (saute). Till the meat is not pink and then place this into a warmer.  Do NOT overcook the meat.  Cook the meat in small batches so that it is cooked quickly and then keep the meat warm in a 200 degree oven or a warmer type of dish. 

Cut lettuce, tomato, (and onions optional) for garnish and serve over warmed pita or flat breads.
