Can we brine a turkey if we are going to fry it or should we just inject it?

You can do either but I suggest you "dry brine" if you are going to fry the turkey.  Make a rub with the spices you desire on your turkey then rub the spices into the skin as well as under the skin ASAP.  It would have been good to do this last night (Sunday night) but it is ok if you do it tomorrow (Tuesday morning) and leave it in the fridge covered on a half sheet cookie tray. 

I am doing mine with a compound butter rubbed all over the skin and under the skin and then roasted in a 450 oven for 45 minutes then turned down to 325 and I am doing two birds about 12 pounds each so all the meat is done and the turkey is not dry.  I hate dry turkey.

Thanks - we have 2 allso - both to be fried and 3 racks of ribs my husband will smoke.
