Well, I only go back to the early/mid 80's, so I'll give you my 30(ish) year team.
QB: Peyton Manning. No brainer.
RB: Lots of choices here. I'll go with Chuck Webb and Jamal Lewis, who were clearly the most talented runners we've had, even as injury curtailed their sheer production. But look at all the guys who get left off: Cobb, Thompson, Stewart, Garner, Graham, Henry, Stephens, Hurd, etc. Probably our strongest position group. If I want to line up in an old-school I, I'll take Greg Amsler at FB. Bryson was more of a playmaker, but Amsler was the total package.
WR: Probably the toughest group to figure, because Peyton made a lot of pedestrian guys look a lot better than they actually were. Still, you can't just ignore Joey Kent's production, so I'll take him, along with Carl Pickens. For my third, I'm going to take a wildcard who was criminally under-utilized by Dooley, Cordarelle Patterson. Dude could have been a superstar under better circumstances.
TE: Jason Witten. Another no-brainer.
OL: Antone Davis, Charles McCrae, Cosey Coleman, Eric Still, Aaron Sears. I know they were all tackles, but they'll make it work.
(In looking at our offenses over the years, I'm struck by all the talent that surrounded Andy Kelly in his time here. Not to knock AK, but can you imagine if Peyton had had that kind of firepower? They would have been unstoppable.)
DE: Reggie White is the easy choice. But who goes on the other side? I'm going with Derek Barnett, who has a chance to break some of the MOD's records with a big season this year. Apologies to Chuck Smith, Shaun Ellis, Leonard Little, Will Overstreet, etc. This is another very strong group.
DT: We had about a 10 year run of great DTs from the mid-90s to mid 2000's that we haven't really matched before or since. I'm going to go with Henderson and Haynesworth since they played so well together. But If you take a Walker, Ratliffe, Harrell, or Mahelona, I won't be mad.
LB: Al Wilson, obviously. I'm also going to go current here again and take JRM. He was the best player on our team last year (on either side of the ball), and there's no reason to expect less this year. And since I feel that Leornard Little has to go somewhere, I'll go ahead and take him here. Again, there are a ton of great choices at LB, so it's hard to go wrong.
CB: Cam Sutton isn't the most glamorous of players, but he's been a rock in our secondary for the past three years. I'll take him, along with Dewayne Goodrich.
S: Eric Berry and Dale Carter make this one easy, but it speaks to their greatness that guys like Chris White, Deon Grant, Jason Allen, and Gibril Wilson miss the cut.
Specialists: Give me Fuad Reveiz, Dustin Colquitt, Willie Gault, and Evan Berry. Championship.
