Never entered one with a lot of money on the table (some of them have prizes in the $20,000 range and UP. Suggestions for entering. Have a good team of about 4 - 6 people and practice a couple of times so you each know what you will be doing. Make sure ot have one person as your "fireman" so that the hickory or whatever wood you are smoking with is not fed too fast or slow. Too fast and the meat will become very bitter. Too slow and you don't have the right amount of smoke happening. Come up with a good name....something like "Big Orange Pork Stompers" or some such Title: Re: Emeril...
